My husband is from the south and when it comes to biscuits he is an expert. I have tried replicating his grandmother’s famous recipe but it never properly veganized.
I decided to give it another try with some different ingredients. These received the “Jack Seal of Approval”.
Super simple to make but the key is to make sure the Earth Balance is COLD when mixing into the flour and other dry ingredients.

I have never been much of a breakfast person however when I do feel in the mood or we are having company, this frittata really fits the bill.
I also serve it for dinner with a fresh green salad and it is also perfect as a lunchtime leftover.

I have never been a huge fan of breakfast foods, possibly because during college I waited on tables at a pancake restaurant, specifically called “The Pancake House”. The schedule had me arriving at work between 5 and 5:30 a.m. and often, particularly on weekends, I didn’t get to bed until 2:30 a.m. I think the combination of the lack of sleep and the smell of breakfast took me years to overcome.
But pancakes are a go-to Saturday morning “treat” breakfast nowadays. I credit my son, Rob, for creating and sharing this great recipe.
