There is one main question that every vegan on the planet has been asked at least 1,000 times. “Where do you get your protein?”

After a standard eye-roll, I generally spout off a list that includes…Vegetables, Soy, Nuts, Non-Dairy Milk, Beans, Quinoa, Tofu, Lentils, Oats, etc. etc.

I decided to give an extra boost of protein to these Oat Banana Muffins by adding 1/4 cup of vegan Now Sports Pea Protein purchased here. They are not too sweet and contain ZERO white sugar.

 

Applesauce Eggs

Ingredients

  • 1/2 cup applesauce
  • 1 tsp. baking powder

Directions

  1. In a small bowl combine Applesauce and Baking Powder. Let sit for 5 minutes until it starts to puff.

Oat Banana Muffins

Ingredients

  • 1/3 cup Earth Balance Vegan Margarine, melted
  • 1/2 cup maple syrup
  • 1/4 cup almond milk or other non-dairy milk of choice
  • 1 cup Bananas, mashed (about 3 large bananas)
  • 1 tsp. baking soda
  • 1 tsp. vanilla extract
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 1/2 cups flour
  • 1/4 cup Vegan Protein Powder
  • 1/2 cup oats

Directions

  1. In a large bowl combine melted Earth Balance, Maple Syrup, Applesauce Eggs, Almond (or other non-dairy milk) and Bananas.
  2. Stir in Baking Soda, Vanilla, Nutmeg, Cinnamon, Salt, Flour, Protein Powder and Oats. DO NOT OVERMIX OR MUFFINS WILL BE TOUGH.
  3. Drop batter into paper-lined muffin tins.

Topping

Ingredients

  • 2 Tbl. maple syrup
  • 1/4 cup oats
  • 1/4 tsp. cinnamon

  1. Top with small amount of Maple Syrup, Oats and Cinnamon.
  2. Bake in 325 degree oven for 22 minutes or until golden brown.
