A huge shout out to Twospoons.ca for posting their mushroom pasta recipe which was featured on Vegan Feed Gram. It was a great inspiration for my creation shown here. This is a super-fast dinner idea and takes less than 30 minutes from start to finish.

You can experiment with different types of veggies and also pasta. I used what I had in my pantry and am delighted with the deliciousness of this dish!

Ingredients

  • 2 Tbl. olive oil
  • 2 Tbl. Earth Balance
  • 8 oz. mushrooms sliced NOTE: Cremini or Baby Bella are a good choice.
  • 2 medium shallots diced
  • 1 large tomato diced
  • 1 Tbl. garlic crushed
  • 1 tsp. salt
  • 1 tsp. Thyme,
  • 1 tsp. Oregano
  • 2 Tbl. flour
  • 13.5 oz. low fat coconut milk, room temperature
  • 4 oz. Follow Your Heart Vegan Parmesan Shreds
  • 1/2 cup pasta water
  • 10 oz. Spinach, fresh
  • 1 lb. pasta

Directions

  1. Heat Olive Oil and melt Earth Balance in a large saute pan. Add mushrooms and saute over medium heat for 3 minutes. Add shallots and continue cooking for an additional 3 minutes or until shallots soften slightly.
  2. Stir in tomato, garlic, and seasonings. Continue cooking for about a minute.
  3. Whisk in flour and mix until incorporated. Add coconut milk and stir until combined. Continue cooking for 1 to 2 minutes until the mixture starts to thicken.
  4. Stir in Follow Your Heart Vegan Shreds and pasta water. Cook about a minute more. Add spinach and cook until slightly wilted.
  5. Place cooked pasta in a bowl and mix in the sauce.
  6. Optional: Top with additional Follow Your Heart Vegan Shreds and fresh, crushed pepper.
