I never quite understood why people ate kumquats but they were staring back at me in the produce section so I decided to tackle trying to create a recipe using them. I am not a huge fan of the taste of them, alone, but mixed together with a few sweeter-variety fruits makes them somewhat irresistible.
I never really enjoyed the taste of meat but there is something “meaty”, for lack of a better word, about Portobello Mushrooms. They are deliciously satisfying and make a great dinner or super-hardy lunch.
Since I live in Southern California I can grill them almost every day of the year or, in this particular recipe, I used the oven because I wanted to keep them as moist as possible.

I have made many, many batches of Cream of Broccoli Soup through the years but always used regular broccoli.
I had a some broccoli rabe in my refrigerator and decided to experiment with it. Since broccoli rabe has a less bitter and milder taste than regular broccoli, it was worth a bit of experimentation.
WOW. The soup was so unbelievably creamy and mild. I suggest you give this recipe a try soon.
For dinner you can serve alongside salad for a complete meal. Trust me, this soup is hardy so you don’t need any bread.
