I am so thankful to live in Southern California. Beyond the beautiful weather and beaches is how the Spanish influence has helped to shape the state.
In addition to their dedication to family and friends the Mexican culture also introduced us to amazing foods. Thanks to Soyrizo and avocados, veganizing Mexican favorites is simple.
As a note there are varying degrees of spiciness in different brands of Soyrizo. I have found the best and mildest to be from El Burrito. In addition to being Vegan it is also Organic, Gluten Free, Non-GMO and contains no preservatives.

I had a bag of fingerling potatoes and 3 Portobello mushrooms in my refrigerator and decided to get creative.
I love potatoes and usually end up eating them once every 2 weeks (but would honestly eat them every night if I could)!
Although my potato-of-choice is french fries, I try to opt for preparing healthier options.
This is a meal that comes together quickly and is great for leftovers. You can get 12 tacos out of this recipe and still have some of the Avocado Cream sauce to spare.
And, this start-to-finish recipe is ready in less than an hour!

I lived in Kansas City for a time in my life and loved the taste of BBQ-sauce. I didn’t eat meat but found the spicy-sweet goodness was a perfect complement to french fries or baked potatoes!
Recently I saw Upton’s Naturals Bar-B-Que Jackfruit and decided to try to use it as a filling for enchiladas. They came out really great but may be a bit spicy for some people so try adding a little extra vegan sour cream.
