I heart potatoes. Baked. Boiled. Fried. I never met a potato I didn’t like except of course tater tots and frozen processed hash brown patties, they are nothing short of substandard imitations filled with greasy gobs of preservatives. However, a fresh potato, brimming with calcium, magnesium, iron and potassium, is absolutely incredible.
I have tried this recipe with both white and sweet potatoes and can pretty much guarantee, it is nutritional, satisfying and delicious.

It has become somewhat of a challenge with me to use up everything I have in the refrigerator before going back to the store.
There is so much waste in our country that I try to be as mindful as possible to not throw away anything that can still be eaten.
We had this with a dry pinot noir and ate the leftovers, cold, for lunch the following day.
ENJOY!

Sometimes when the day has completely worn you down it calls for something “comforting” for dinner.
I created this recipe based on my mom’s famous chicken and gravy. This one, however, is cruelty-free and opts for riced cauliflower to save on carbs and calories.
ENJOY!
