I grew up in New York and in addition to Utica Greens (recipe to come at a later date) the state is home to Buffalo and Buffalo Wings. As this is a vegan blog there are no chicken wings but the spice is oh-so-nice.
I came across Tessemae’s Mild Buffalo Sauce and decided to create something healthy and delicious. I cooked it in the vegetables and then drained out the excess liquid to keep the heat manageable.

I love Chinese cuisine and have been experimenting with using tofu instead of animal products in some traditional dishes. This recipe was inspired by the lettuce wraps from PF Changs but I added my own touch and ingredients that vary from the original. Plus, this dish serves as a main entree rather than an appetizer.
The taste is tangy, a little bit sweet with undertones of spicy goodness.

I never quite understood why people ate kumquats but they were staring back at me in the produce section so I decided to tackle trying to create a recipe using them. I am not a huge fan of the taste of them, alone, but mixed together with a few sweeter-variety fruits makes them somewhat irresistible.
