I grew up in an Italian/French household and pasta and dessert were staples. I really love both but as we know they can pile on the pounds. When I can, I try to subsititute healthier ingredients. Spaghetti Squash is really easy to use in just about any dish in place of pasta. A word of advice the trick is to make sure you cook spaghetti squash ompletely before breaking into strands.
The addition of the bok choy and zucchini not only makes this dish healthier but also satisfying.
I prefer it hot but is also great cold.

Pesto always seemed a bit too rich for me and it wasn’t until I started to experiment with developing recipes without using the cheese that I realized just how much better it would taste.
The fragrant basil is perfectly balanced with the olive oil plus, without the cheese you loose a lot of the fat.
You can double the basil pesto sauce recipe and keep the extra, stored in an airtight container, in the refrigerator for up to a week. It is also great on baked potatoes, rice or cauliflower rice!

I heart potatoes. Baked. Boiled. Fried. I never met a potato I didn’t like except of course tater tots and frozen processed hash brown patties, they are nothing short of substandard imitations filled with greasy gobs of preservatives. However, a fresh potato, brimming with calcium, magnesium, iron and potassium, is absolutely incredible.
I have tried this recipe with both white and sweet potatoes and can pretty much guarantee, it is nutritional, satisfying and delicious.
