Tofu is amazing! However, not by itself. To me, the stuff straight out of the package is somewhat disgusting. It deserves to be baked, fried, broiled, sauteed and blackened.
I love garlic but when cooking with it there is a fine line between getting it crispy and burning it. Make sure to keep the heat at a medium-high temperature and be sure to keep stirring it when cooking.
I had some fresh basil and cilantro that on hand so I decided to toss it in the rice. The result was YUM!

I always loved the idea of Brussels Sprouts with their complex and complete nutritional profile. I never really liked the taste of them, so I made it a mission to make them more palatable.
The recipe I created is a great option for those on both sides of the Brussels Sprouts debate.

Excellent and Quick Meatless Monday Option for dinner tonight!
I am not quite sure what makes me crave caramel this time of year. Perhaps it is because fall was always caramel apple season when I was growing up.
In addition to making a lot of pumpkin recipes leading up to Thanksgiving, I also find myself experimenting with caramelizing.
If you are not a fan of eggplant, you can always substitute zucchini or broccoli rabe.
