I am often asked how do I have the time to make soup when in reality, soup is one of the quickest meals to come together, especially if you use a pressure cooker.
This yummy soup went from raw ingredients to bowls in less than 40 minutes (I used a traditional pot on a cooktop) and the leftovers are almost as good as the first servings.
The key in this recipe is to use red lentils, green lentils just don’t seem to work as seamlessly with these ingredients. You can omit the potatoes, but they definitely add another tasty dimension to the finished dish.

I found some Saffron Threads on sale at Whole Foods and decided to try and make some Paella. I searched for recipes online and came across one from LovingItVegan.com.
I love vegetables so I decided to make some alterations and additions to the original recipe. It is important to use Paella Rice, which I found at Whole Foods Market.
Feel free to add your own choice of vegetables, creativity is always a good thing!

I am a big fan of bok choy and my husband is absolutely obsessed with it! I have come up with a few recipes but I wanted to try and create something a bit different this time.
You can roast the bok choy in the oven or on a grill. The key is to make sure that you grease the surface before cooking.
For the Garlic Seasoned Rice, feel free to add any additional herbs…the more the better!
