I heart potatoes. Baked. Boiled. Fried. I never met a potato I didn’t like except of course tater tots and frozen processed hash brown patties, they are nothing short of substandard imitations filled with greasy gobs of preservatives. However, a fresh potato, brimming with calcium, magnesium, iron and potassium, is absolutely incredible.
I have tried this recipe with both white and sweet potatoes and can pretty much guarantee, it is nutritional, satisfying and delicious.

I asked my son for his zucchini fritters recipe but he was under a work deadline and didn’t get back to me before I needed to start dinner. (NOTE: I am not known for my patience.)
I had some veggies in the refrigerator and decided to try to come up with my own fritter/pancakes.

Anyone that likes the taste of licorice should definitely like fennel. And, notable it is one of the world’s healthiest foods and is good source of Vitamin C, fiber, potassium, calcium, magnesium, iron and niacin.
I am usually not a fan of beets but together with the seasonings, fennel and potato they really were delicious.
