Coconut milk is some kind of wonderful. However, due to the recent discovery by PETA that a Thai company was abusing monkeys by forcing them to pick coconuts from the trees. “The animals were kept tethered, chained to old tires, or confined to cages barely larger than their bodies, deprived of any semblance of a life,” said PETA.

Any coconut milk purchased from Chaokoh, and other Thai coconut milk producers, represents the misery of a chained-up monkey,” according to PETA EVP Tracy Reiman. Thanks to PETA’s efforts, Kroger, Albertsons, Safeway, Wegmans, Costco, Target, Food Lion, and Stop & Shop have suspended the sale of Chaokoh coconut milk.

Other brands, located in Thailand, use this same horrid practice, but PETA investigations revealed that is only happening in Thailand. A good rule of thumb is to avoid any canned coconut milk from Thailand.

This dish can be used with different vegetables. And if you are not a fan of Herbs de Provence, feel free to substitute cumin/oregano/garlic powder.

I came across a recipe yesterday that I used as a template for this one. The original, in my opinion, lacked imagination and a variety of flavor levels.

It comes together in about 20 minutes, along with the 35-minute cooking time, (5 minutes for sauteeing vegetables, 30 minutes for baking) which means dinner will be ready in less than 1 hour.

When putting the casserole together, I recommend using a 9×13″ glass baking pan and cutting one of the corn tortillas in half to fill open spaces on the bottom layer. I started by placing 3 of the tortillas in a row, filling the second row with two, and placing the two halves on each side to fill the entire bottom of the baking pan.

If you have any questions, please feel free to ask me in the comments section or send me an email.

ENJOY!

Ask anyone that knows their beans, especially vegans, just how nutritious and delicious chickpeas are, and they are low in fat! One cup contains 269 calories and a whopping 14.5 grams of protein with only 4 grams of fat. In addition, if you are looking to increase your fiber, chickpeas contain 12.5 grams along with 80.4 mg of calcium and nearly 80 mg of magnesium.

Chickpeas contain all nine essential amino acids which make them a complete protein, necessary building blocks that keep bodies functioning properly.

And, with the spinach, this soup is one of the healthiest in my repertoire and is also fantastic when you have a cold or flu.

ENJOY!
