I lived in Kansas City for a time in my life and loved the taste of BBQ-sauce. I didn’t eat meat but found the spicy-sweet goodness was a perfect complement to french fries or baked potatoes!
Recently I saw Upton’s Naturals Bar-B-Que Jackfruit and decided to try to use it as a filling for enchiladas. They came out really great but may be a bit spicy for some people so try adding a little extra vegan sour cream.

I really love experimenting with a variety of unusual ingredient combinations! Sometimes my trials work out and sometimes they do not!
I created this dish based on items I needed to use up before they expired and the outcome was delightful!
This recipe makes enough to serve 8 people and goes great with a side salad.

OK, please don’t laugh out loud when I tell you I was in the mood for chili when the Southern California temps dipped into the low 60’s! Since I was born and raised in upstate New York you think I would be used to below zero temperatures and mounds of snow. Needless to say, I prefer palms to pines and sand to snow.
My husband cannot handle spices very well so this recipe is a mild version of chili but if you like a bit more heat, increase the chili powder from 1 tsp. to 1 Tbl. Also, this calls for 2 cups of water to make the chili more soup-like but if you prefer it super thick, decrease it to 1 cup.
