It is raining again in Southern California. This has been one of the wettest winters on record but no one is complaining! We need the moisture, albeit maybe not this much, to help with the years-long drought.
I ran to the Whole Foods before the torrential downpours started and gathered up some ingredients for some Chili.
This recipe only takes about 10 minutes to prepare and 90 minutes to cook.
Serve it with a handful of tortilla chips or even some oven-baked polenta.

Until this recipe I had never cooked with pearl onions. They are a bit of effort to remove the skins but can come off rather quickly with this method.
- Slice off ends and place pearl onions in boiling or hot water and then cool. The skins should easily peel off.
My friend had some leftover fresh herbs that I used to season the onions. I just used the entire stalk of herb and then removed before serving. If you prefer, you can chop the herbs before cooking and leave in the dish.

Broccoli is one of the best vegetables! It is a great source of Vitamin C which is vital during cold and flu season.
I make this dish year-round and include some apple cider vinegar to help boost health benefits.
