When I think of comfort food it definitely involves a creamy texture. This one just uses a little bit of vegan cream cheese per serving which makes it a lot less naughty.
You can, as always, substitute veggies in this dish depending on your individual tastes.
I used Lotus Foods Jade Rice Noodles* to keep it gluten free. But feel free to use any type of preferred rice/noodle/grain.

I am not a huge fan of dessert but these offer just the right amount of sweetness! They are fairly easy to make and because you put the entire batter into one baking sheet, cleanup is easy.
It took me quite a long time to find some good vegan butterscotch chips and I purchased mine here. They also have vegan white chocolate chips! AMAZING!
You can make these into cookies but the bars are so-much-easier! Also perfect during the hot summer months when you want to limit oven time.

I am so thankful to live in Southern California. Beyond the beautiful weather and beaches is how the Spanish influence has helped to shape the state.
In addition to their dedication to family and friends the Mexican culture also introduced us to amazing foods. Thanks to Soyrizo and avocados, veganizing Mexican favorites is simple.
As a note there are varying degrees of spiciness in different brands of Soyrizo. I have found the best and mildest to be from El Burrito. In addition to being Vegan it is also Organic, Gluten Free, Non-GMO and contains no preservatives.
