Mexican Food. Si Si Si!
I did not grow up having Mexican food, there wasn’t much of it to be found decades ago in a small Upstate NY town. But, since I dipped my first tortilla chip into a bowl of fresh guacamole, I was hooked.
I continue to try and create Mexican classics, veganized. This one happens to be one of my husband’s favorite dishes and I hope that you, too,….ENJOY!

There are times, although not too often, I just want a sandwich. You can opt to make this without the tempeh bacon and it is just as good.
Also, when I am looking for something a little creamier, I opt for Chao Cheese Slices and press the sandwich.

I have never been a huge fan of breakfast foods, possibly because during college I waited on tables at a pancake restaurant, specifically called “The Pancake House”. The schedule had me arriving at work between 5 and 5:30 a.m. and often, particularly on weekends, I didn’t get to bed until 2:30 a.m. I think the combination of the lack of sleep and the smell of breakfast took me years to overcome.
But pancakes are a go-to Saturday morning “treat” breakfast nowadays. I credit my son, Rob, for creating and sharing this great recipe.
