I am so thankful to live in Southern California. Beyond the beautiful weather and beaches is how the Spanish influence has helped to shape the state.
In addition to their dedication to family and friends the Mexican culture also introduced us to amazing foods. Thanks to Soyrizo and avocados, veganizing Mexican favorites is simple.
As a note there are varying degrees of spiciness in different brands of Soyrizo. I have found the best and mildest to be from El Burrito. In addition to being Vegan it is also Organic, Gluten Free, Non-GMO and contains no preservatives.

I spent a lot of my work time in the U.K. and it was there that I discovered curry. It is the perfect dish for a cold night or when you want something super satisfying.
Many people find it to be too spicy so I decided to make a bland, yet flavorful version. This suits every taste but, if you are a diehard curry fan, go ahead and amp up the spices.
You can add more veggies if you like or substitute the ones used in this recipe.

YOU WILL NOT MISS THE MEAT OR CHEESE!
These tempting delights come together in a flash. From start to done they only require about 30 minutes, including cooking time!
My recommendation is to allow the dough (I used Trader Joe’s Pizza Dough) to sit, out of the bag, at room temperature for 15 minutes.
You can always add more veggies but in this case, the simpler, the better.
