I really enjoy the taste and texture of Baby Bok Choy. This recipe takes the very best of the vegetable and adds a satisfying savory, spicy, with some subliminal sweet undertones.

Baby Bok Choy is a great source of Vitamins A, C, and K plus is extremely low in calories and only contains a tiny amount of fat.  The texture and taste of the green leaves are similar to spinach and the stalks are similar to celery.

It is good raw but much better cooked. Baby Bok Choy is a staple in Chinese cuisine.

You can also try to grill the prepared Baby Bok Choy on the grill. It was raining today in Southern California so I opted for the oven! To cut calories and fat, eliminate the vegan feta.

Ingredients

  • 5 medium baby bok choy halved
  • 6 Tbl. olive oil
  • 3/4 Tbl. Sesame Oil,
  • 1/3 cup low sodium tamari
  • 2 Tbl. maple syrup
  • 1/2 tsp. ginger
  • 1/2 tsp. red pepper flakes
  • 1/2 cup Follow Your Heart Vegan Feta Crumbles

Directions

  1. Cut baby bok choy in half, lengthwise, and place in a large bowl.
  2. In a small container, whisk together oils, tamari, maple syrup, ginger, and red pepper flakes.
  3. Pour over baby bok choy and toss to coat. Let sit for 1 hour at room temperature, gently tossing a few times.
  4. Line a baking sheet with foil and spray. Place baby bok choy on foil and top with remaining marinade. Bake at 375 degrees for 2 minutes.
  5. Remove from oven and top with feta crumbles. Set oven to broil and place under broiler for about 2 minutes. (Check often to make the tops don't burn.)
  6. Serve with rice, noodles, or as a side.
