Growing up I always loved family barbeques. There was always something special about cooking and eating outside, surrounded by happy people. I always loved the taste of barbeque sauce and wanted to create a Korean option using tofu.

This BBQ Korean Tofu is great by itself, or as a topping for rice, noodles, spaghetti squash, or cauliflower mash. It is also a delicious option to toss in a salad or to simply eat straight out to the pan!

Ingredients

  • 2 blocks tofu drained and cut into cubes
  • 1 cup cornstarch
  • 2 tsp salt to taste
  • 1 cup tomato sauce
  • 1/2 cup red wine vinegar
  • 1/2 cup tamari or soy sauce
  • 4 Tbl maple syrup
  • 2-4 tsp Gochujang paste to taste
  • 1 medium Apple skin on, grated
  • 4 cloves garlic chopped
  • 2 inch ginger grated

Directions

  1. Press and Drain tofu and cut into cubes Put cornstarch & salt in a bag and add cut tofu cubes. Shake to coat.
  2. Put cornstarch & salt in bag and add cut, drained tofu cubes. Gently shake to coat.
  3. Fry coated tofu in a few tablespoons of olive oil (or oil of choice) until brown and crispy on all sides.
  4. Mix together all sauce ingredients - tomato sauce, vinegar, tamari, maple syrup, gochujang paste, apple, garlic, and ginger.
  5. Remove cooked tofu from pan and add 1/2 of tomato sauce mixture to the pan and cook 1 minute. Put tofu back in pan and coat with sauce.
  6. Serve on base of choice (rice, noodles, squash, etc.) and drizzle with extra sauce.
