One of our business clients required that we travel to/from the U.K. once a month. We really liked that they are committed to taking an afternoon break for a cup of tea.

I prefer my scones a bit more on the sweet biscuit side rather than the traditional bread-like English ones.

You can substitute any kind of berries in place of the blackberries, depending on what is in season.

Ingredients

  • 1 cup non-dairy milk
  • 2 Tbl apple cider vinegar
  • 1/3 cup vegetable oil
  • 1/2 cup sugar
  • 3 cup flour
  • 2 Tbl baking powder
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/2 cup vegan sour cream
  • 2 cups blackberries
  • 1 Tbl sugar
  • 2 Tbl flour

Directions

  1. Preheat oven to 400°
  2. In a small bowl mix together non dairy milk and apple cider vinegar. Set aside 5 min.
  3. In a large bowl mix together oil and sugar.
  4. Stir in flour, baking powder, salt, and nutmeg.
  5. Add sour cream and non dairy milk + vinegar mixture and gently fold in Blackberries.
  6. Empty scone mixture on floured surface and form into triangles and place in greased baking sheet
  7. Sprinkle tops with the additional 1 Tbl. Sugar
  8. Bake at 400° for 18 to 20 min.
