Cookies, and desserts in general, are not my favorite food. But there is something about these molasses cookies that I absolutely love and crave. They are crispy on the outside and chewy on the inside with just the right amount of sweetness and spice.

This recipe yields a lot of cookies….60 to 72 but they freeze well. (In case you don’t want to eat them all in one day!)

Roll a heaping teaspoon of batter into a ball and then roll into sugar before baking.

Ingredients

  • 1/2 cup applesauce mixed with 1 tsp. of baking powder
  • 1 cup Earth Balance Margarine softened
  • 1 cup white sugar plus more for rolling cookies
  • 1 cup brown sugar
  • 1 cup molasses
  • 4 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 3/4 tsp. cloves
  • 3/4 tsp. nutmeg
  • 3 1/2 tsp. ginger powder
  • 4 cups flour more if dough is too sticky

Directions

  1. In a small bowl make applesauce eggs by stirring together the applesauce and baking powder. Set aside for a few minutes.
  2. Cream Earth Balance and sugars until completely combined, about 2 minutes. Add applesauce eggs and molasses.
  3. Whisk together baking soda and spices and add to the batter.
  4. Add flour, one cup at a time, incorporating each cup thoroughly.
  5. Take a heaping teaspoon full of batter and roll it into a ball. Roll balls in a small bowl of sugar and bake on a greased baking sheet or parchment paper. (The parchment paper works best.)
  6. Bake at 350 degrees for approximately 11 minutes, or until the bottoms of cookies are golden brown. Let sit on the baking sheet for 1 to 2 minutes before transferring to a wire cooling rack.
  7. Store in an airtight container. Best when eaten within 2-3 days.
