I love eggplant parmesan and decided to substitute zucchini, not deep fry it, and cut down on bread crumbs to make it healthier. This dish is delicious and zucchini is also nutritious. A medium zucchini only has around 30 calories and contains protein, fiber, Vitamin B6, Folate, Potassium, Riboflavin, Manganese, Copper, and Iron. Plus it boasts almost 40% of the recommended daily value of Vitamin C.

It comes together easily and in a relatively short amount of time. Perfect for hectic back-to-school weeknights. I recommend serving it with a side salad or,  for a heartier meal, alongside a simple pasta or couscous.

Ingredients

  • 2 Large zucchini, or 3-4 medium, sliced into rounds
  • 10 medium tomatoes
  • 1 tsp. garlic powder
  • 1 tsp. Oregano
  • 1 tsp. salt PLUS more for draining zucchini
  • 2 medium shallots diced
  • 1/4 cup pine nuts
  • 1/2 cup breadcrumbs regular or gluten-free
  • 1/2 cup Follow Your Heart Vegan Parmesan Shreds

Directions

  1. Slice zucchini (keep the skin on) and place in a colander. Top generously with salt and let it drain for about 15 minutes.
  2. While the zucchini is draining, half the 10 tomatoes and place, cut side down, in a baking dish. Drizzle with olive oil and sprinkle garlic powder, oregano, and salt. Bake at 350 degrees for 15 minutes, or until fork-tender. Remove from oven and set aside.
  3. Pour some olive oil into a saute pan (or use olive oil spray) and add the shallots. Cook over low heat for 2-3 minutes. Lightly rinse and pat dry zucchini rounds and add, cooking a few minutes on both sides until slightly browned.
  4. Stir in pine nuts, bread crumbs, and vegan parmesan. Continue cooking for 2 minutes. Stir in baked tomatoes, breaking apart into small pieces.
