I am not really sure what gave me the idea to combine bananas and avocados and I am equally as certain that not everyone will be a fan of this combination, however it is definitely worth a try. For those that may be a bit timid, I would recommend starting with half of a banana and then adding more if you like the taste.

Tex Mex Jack Fruit
Ingredients
- 1 Package Tex Mex Jack Fruit, shredded
- 2 Tbl. fresh cilantro Chopped
- 1/2 tsp. salt
Directions
- Shred Tex Mex Jack Fruit and mix in a medium bowl with cilantro and salt.
- Cover and heat in microwave oven :90 seconds to 2:00 minutes, or until warm.
Avocado-Banana Mash
Ingredients
- 1 Medium banana mashed
- 1 large avocado mashed
- 1/2 medium lime juiced
- 1/2 tsp pink sea salt
Directions
- Mash together avocado and banana.
- Stir in juice of lime and salt.
Corn Tortillas & Tempting Toppings
Ingredients
- 8 small corn tortillas, heated
- 1 cup Parmela Creamery Aged Cheddar
- 4 Tbl. vegan ranch dressing
Directions
- Heat corn tortillas.
- Top with equal amounts of Jack Fruit mixture.
- Add a layer of 1/8 cup of Parmela Creamery Cheese per tortilla, Avocado-Banana Filling and top with Vegan Ranch (or, if you prefer, salsa).
