I spent a lot of my work time in the U.K. and it was there that I discovered curry. It is the perfect dish for a cold night or when you want something super satisfying.

Many people find it to be too spicy so I decided to make a bland, yet flavorful version. This suits every taste but, if you are a diehard curry fan, go ahead and amp up the spices.

You can add more veggies if you like or substitute the ones used in this recipe.

Ingredients

  • 2 tbl. olive oil
  • 3 small shallots finely diced
  • 1/2 large Green Bell Pepper, diced
  • 8 oz. butternut squash chopped
  • 6 small fingerling potatoes, sliced
  • 1 large tomato diced
  • 4 large basil leaves chopped
  • 1 tsp. Reduced Sodium, Better Than Bouillon
  • 13.5 oz. reduced fat coconut milk
  • 1/4 tsp. Coriander Powder
  • 1/4 tsp. Cumin Powder
  • 1 tsp. salt

Directions

  1. In a saucepan, heat oil. Add shallots and bell pepper and saute for 2 minutes.
  2. Stir in butternut squash, potatoes and tomato and continue cooking for 8 minutes, stirring often, to prevent sticking to bottom of pan.
  3. Add basil leaves, Reduced Sodium Better than Bouillon, Coconut Milk and seasonings.
  4. Simmer for 20 minutes, stirring often.
  5. Serve over rice or grain of choice and top with cilantro.
