Who doesn’t like egg rolls? However, for vegans most of the time the wrappers contain eggs and the rolls are often deep fried in animal fat.

I decided to try and make some vegan-friendly egg rolls that were oven baked and loaded with yummy goodness.

The key is in the filling, feel free to experiment with different veggies other than the ones listed here.

Fabulous Filling

Ingredients

  • 1 1/2 Tbl. sesame seed oil
  • 1 medium onion chopped
  • 1/2 cup scallions white part only, chopped
  • 1 Tbl. garlic chopped
  • 8 oz. mushrooms finely chopped
  • 1 cup carrots shredded
  • 10 oz. green cabbage shredded
  • 1 cup broccoli steamed and chopped
  • 1/2 tsp. ginger
  • 2 Tbl. low sodium tamari
  • 1 tsp. cornstarch

Directions

  1. In a large saute pan, heat oil and add onions, scallions and garlic. Cook over medium heat for 4 to 5 minutes.
  2. Stir in chopped mushrooms and continue cooking for 2 to 3 minutes.
  3. Add carrots, cabbage, broccoli and ginger and cook for 4 to 5 minutes or until slightly wilted.
  4. In a small bowl dissolve cornstarch in tamari
  5. Stir in sauce and heat for 30 seconds. Remove from heat and let mixture cool slightly.

Egg(less) Wrappers

Ingredients

  • 24 round wrappers

Directions

  1. Preheat oven to 425 degrees.
  2. Prepare a foil-lined baking sheet sprayed with vegetable cooking spray.
  3. On a clean surface, place one egg(less) wrapper and spoon 1 heaping tablespoon of mixture onto bottom 1/3 of wrapper, leaving room on sides and bottom to fold.
  4. Roll wrappers by first bringing up bottom portion, securing filling in place and then bring in sides. You will have a semi-wrapped roll with the top looking like the flap of an envelope.
  5. Using your finger, spread water on outside edges of flap and continue rolling until completed sealed.
  6. Place on prepared baking sheet, folded side down and then spray top of each roll with cooking spray.
  7. Cook 18 to 20 minutes, flipping rolls at the halfway point.
  8. Serve with sauce of choice.
