Holy Guacamole, you may never want to eat regular guacamole again! This super-creamy sensation is great on tacos, burritos, chips, toast and more. Heck, I would even eat it on my oatmeal! LOL

Just a few ingredients and ready in a flash. Great for last-minute appetizers that will definitely impress your guests!

YUM! I noticed some great looking organic fennel in the grocery store the other day and picked up some. I wasn’t quite sure what I was going to do with it but bought it anyway!

When I was young I remember holiday dinners were always finished with a stalk of fennel and a small glass of red wine for dipping. The licorice-taste and crisp texture always had me looking forward to this tradition.

I decided to roast the fennel, using the entire head (about the size of a fist), without the leaves. The result…bellissimo!

OK, The recipe I created last night had a lot of leftovers so I thought I would put them to good use. Simply follow the instructions for the “Sauce” here.

Boil a pan of orzo, rice or noodle of choice. Reserve 1/2 cup of pasta water. Steam 10-oz. of broccoli and toss together all ingredients with sauce.
