For the second part of my Broccoli Slaw plate here is the recipe for the Cous-Cous Salad. This is delicious salad, served warm or cold and is based on Ina Garten’s Recipe. Add some veggies you love other than the ones in the recipe. The possibilities are virtually limitless.

The one veggie my grandsons will eat, consistently, is broccoli. They don’t particularly like broccoli slaw, due to the texture. I found that by pulsing it in the food processor makes all the difference. This recipe comes together in literally 5 minutes and stays in the refrigerator for a few days.
Also, I paired it with an Ina Garten recipe passed on from my sweet niece. I did a little tweaking with the original but for the most part, it is all Ina!
The first recipe is for the broccoli slaw and the second for the Cous-Cous Salad.

I have always loved split pea soup and this version adds a few more spices than the normal, somewhat bland, version.
Try serving it with a generous portion of crusty french bread or alongside a kale salad. Green + Green helps keep you healthy!
If you want an even hardier soup, try adding a large, diced potato with the split peas or 1/4 cup pearled barley during the last 25 to 35 minutes of cooking. (You may need to add some additional veggie broth if the soup is too thick.)
ENJOY!
