I absolutely LOVE peanut butter! If it came down to selecting my 3 favorite foods, they would be:

  1. Peanut Butter
  2. Broccoli
  3. French Fries

Even though I am more of a savory girl, these peanut butter cookies offer just the right amount of sweetness!

Drizzling the chocolate topping is definitely optional, but as my grandson insists, everything is better with chocolate!

Ingredients

  • 4 Tbl. vegan egg, mixed with 2/3 cup COLD water
  • 1 1/2 tsp. vanilla extract
  • 1 cup Earth Balance sticks softened (OR butter-flavored Crisco)
  • 1 cup sugar
  • 1 cup peanut butter crunchy
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3 cups flour all purpose
  • 8 oz. dark chocolate chips, melted

Directions

  1. Mix vegan egg with cold water. Add Vanilla Extract.
  2. Cream Earth Balance and Sugar.
  3. Add vegan egg/vanilla extract to earth balance/sugar and mix well.
  4. Mix in peanut butter.
  5. Mix baking soda, salt & flour and then add to egg/butter mixture.
  6. Roll into balls (using approximately 1 heaping teaspoon) and place them on a prepared baking sheet.
  7. Using a fork, dipped in cold water make a crisscross design on top of each cookie ball.
  8. Bake at 350-degrees for 15+ minutes or until bottoms are slightly browned. Remove from the oven and let cool on a baking sheet before transferring to a wire rack to complete cooling.
  9. Melt chocolate chips by placing them in a bowl over a pan of boiling water. Keep on the cooktop but shut off the burner. Using a spoon, stir until melted.
  10. Dip half of cookie into melted chocolate and place on a wire rack until set.
