I am more of a savory girl than a sweet one…from everything to my food preferences to my attitude. However, this combination of slightly-sweet pineapple with the subtleness of white beans makes this dish irrestible.

Ingredients

  • 1 package rice noodles
  • 1 teaspoon Sambel Oleek
  • 1 tablespoon fresh cilantro stemmed and chopped
  • 2 tablespoons coconut oil
  • 1 tablespoon avocado oil
  • 1 can cannellini beans
  • 1 can pineapple crushed
  • 1/2 large onion chopped
  • 4 medium tomatoes chopped
  • 2 tablespoons fresh cilantro stemmed and chopped
  • 2 cups fresh spinach chopped
  • 1 tablespoon dried oregano
  • 1.5 teaspoon salt
  • 1.5 tablespoons tamari

Directions

  1. Prepare rice noodles according to package instructions.
  2. Drain noodles, and mix with 1.5 tablespoons tamari, 1 tablespoon cilantro, and 1 teaspoon Sambal Oleek.
  3. Prepare remaining ingredients and add to skillet over medium-high heat.
  4. Cook until flavors combine.
  5. Mix with noodles and serve.
