Many thanks to my sister, Denise, for giving me the inspiration for this salad. She told me about a sample she had at Trader Joe’s using their new Tahini Dressing.

Because I always prefer to make my own, I thought I would give it a try. This recipe will definitely be one I will make again and try using the tahini dressing with a variety of dishes.

Skin-On Boiled Red Potatoes

Ingredients

  • 2 1/2 lbs red potatoes skin on

Directions

  1. Slice small red potatoes into 1/4" slices and put in a large pot with water. Boil until fork-tender, about 20 minutes.

Creamy Spicy-Sweet Tahini Dressing

Ingredients

  • 1/3 cup tahini
  • 2 Tbl. lemon juice
  • 1 Tbl. garlic crushed
  • 1/2 tsp. salt
  • 2 Tbl. maple syrup
  • 2 Tbl. nutritional yeast

Directions

  1. In a medium bowl whisk together all ingredients until smooth. Set aside.

Massaged Kale for the Salad

Ingredients

  • 1 head kale broken into large bite-sized pieces, discarding stems
  • 1 tsp. salt
  • 1/2 medium lemon juiced
  • 1 Tbl. avocado oil
  • 1 lb. mini heirloom tomatoes halved

Directions

  1. Place kale pieces in large bowl and top with salt, lemon and avocado oil. Mix with hands for 3 minutes or until it starts to wilt. Mix in mini heirloom tomatoes.
  2. Drain potatoes and pour, while still hot, into bowl with kale and tomatoes. Toss with dressing. If desired, top with black pepper.
