There are so many wonderful flavors in this dish that your mouth will be dancing with delight!

Make sure to drain the Soy Chorizo completely otherwise your tostadas will be mushy…which is not a good thing.

Ingredients

  • 2 tbsp olive oil
  • 1 green pepper chopped
  • 1 pkg Soy Chorizo
  • 1 can cannellini beans drained and rinsed
  • 1 can refried black beans
  • 1 cup arugula
  • 1 tsp garlic powder
  • 1 tsp dried cilantro
  • 1/2 tsp cumin
  • 1 can tomatoes diced
  • 1/2 lime juiced

Directions

  1. Saute peppers and onion in olive oil until translucent.
  2. Add Soyrizo and cook 7 to 8 min.
  3. Add seasonings and tomatoes. Cook 4 min. Stir in lime juice.
  4. Serve on a corn tortilla with arugula, chopped tomatoes, Parmela Creamery cheese, avocado slices, and vegan sour cream.
