Veggie burgers are not just for summer. This recipe is perfect for this time of year because they are best cooked on a stove top. They are also healthier than most vegan burgers I have tried because of the beans and quinoa.

I recommend serving alongside fresh veggies. Also, use any leftovers the next day on top of a salad for a crunchy-satisfying meal.

I also like to serve mine with a slice of Chao Cheese, tomato and a simple sauce made with 1/2 cup Follow Your Heart Pesto Vegenaise and 1/4 cup Sriracha.

Ingredients

  • 15 oz. cannellini beans Rinsed and drained
  • 15 oz. black beans Rinsed and drained
  • 1 cup quinoa cooked
  • 3/4 cup roasted red pepper Drained
  • 2 cloves garlic
  • 4 large basil leaves
  • 1/2 tsp. salt
  • 1/2 tsp. onion powder
  • 1/4 tsp. Wrights Liquid Smoke
  • 4 Tbl. Follow Your Heart Vegan Egg Mixed with water, according to package directions
  • 1 1/2 cups panko breadcrumbs

Directions

  1. In bowl of large food processor add beans, quinoa, red pepper, garlic, basil leaves, salt and onion powder. Pulse until blended making sure not to overprocess.
  2. Add remaining ingredients except Panko crumbs and pulse lightly.
  3. Add 1 cup of the Panko breadcrumbs and pulse until mixed.
  4. Wet hands and form into 6 even size patties. *Note: If burgers are too moist, add more panko.
  5. Pour remaining Panko Crumbs in a pie plate, or any other dish with high sides, and press onto both sides of patties to coat.
  6. Place patties on non-stick wax paper or sprayed foil and place in freezer for 15 minutes.
  7. Heat oil in a large frying pan and cook patties for 5 to 6 minutes, per side, over medium-high heat.
