It is raining again in Southern California. This has been one of the wettest winters on record but no one is complaining! We need the moisture, albeit maybe not this much, to help with the years-long drought.
I ran to the Whole Foods before the torrential downpours started and gathered up some ingredients for some Chili.
This recipe only takes about 10 minutes to prepare and 90 minutes to cook.
Serve it with a handful of tortilla chips or even some oven-baked polenta.
ENJOY!

I have made coconut rice in previous recipes on this blog. If you try just one, please let it be this recipe. The pineapple and cilantro add just the right amount of complementing tastes to make this dish memorable.
Here in Southern California, zucchini and summer squash are always available. If you can’t find any in your area you can substitute another vegetable such as broccoli, carrots and/or cauliflower.
ENJOY!

I spent a lot of my work time in the U.K. and it was there that I discovered curry. It is the perfect dish for a cold night or when you want something super satisfying.
Many people find it to be too spicy so I decided to make a bland, yet flavorful version. This suits every taste but, if you are a diehard curry fan, go ahead and amp up the spices.
You can add more veggies if you like or substitute the ones used in this recipe.
ENJOY!
