I have mentioned before that I used to not like the taste of Brussels Sprouts. I have spent many hours creating tasty creations with them and am now a BS-convert!
Did you know these sweet little cabbage-wanna-bes boast 124% of the RDA of Vitamin C. Plus a serving only contains 38 calories and 0.3 grams of fat!
The key, in my opinion, is to make them the a star ingredient in several of my creations because, after all, we all need some extra C!
You can serve this with any type of grain and can also substitute the red/yellow pepper with green.

YUM! I love me some potatoes, anyway possible except in hash brown patties or tater tots!
It’s raining today in Southern California which equates to another one of my 101 reasons to declare it a soup day!
This soup comes together quickly and since potatoes are a relatively bland vegetable, you can use your imagination and add your own toppings.
In addition to the Tofurky and Parmela Creamery shreds I used extra Parmela Creamery shreds, chopped red onion and a dash of Sriracha!
Quick, economical and DELICIOUS!

WOW! Here is a super easy dinner and exceptionally delicious plus it is gluten-free and low in calories.
If you cannot find Soyaki Sauce, try just a combination of Tamari, Sesame Seeds and Maple Syrup.
Also, if you like it spicy, add a bit of Sambal Oelek to the mix…DELICIOUS!
