I am so thankful to live in Southern California. Beyond the beautiful weather and beaches is how the Spanish influence has helped to shape the state.
In addition to their dedication to family and friends the Mexican culture also introduced us to amazing foods. Thanks to Soyrizo and avocados, veganizing Mexican favorites is simple.
As a note there are varying degrees of spiciness in different brands of Soyrizo. I have found the best and mildest to be from El Burrito. In addition to being Vegan it is also Organic, Gluten Free, Non-GMO and contains no preservatives.

I prefer savory to sweet but really enjoy the combination of both together in a dish. I promise that you will not even miss the cheese in this delightful dinner.
If you are not a fan of butternut squash try any other vegan ravioli or plain pasta.
I highly recommend Rising Moon Butternut Squash and Cool Foods Vegi Bacon. ENJOY!

I remember first experiencing Forbidden Rice about 10 years ago while on a business trip for to San Luis Obispo, California. I could not believe how good it tasted and have added this yummy and healthy organic rice variety to my shopping list.
Recently the company, Lotus Foods, introduced their Forbidden Rice Noodles and they are a wonderful addition to dishes that best are complemented with a nutty-tasting base.
Even though the weather in Southern California has been unseasonably HOT this week, I just pumped up the AC and came up with this comfort-food specialty!
