You will most likely see a lot of posts on this site that include cauliflower which, in my opinion, is one of the most versatile foods on the planet.
You can serve this recipe both hot or cold but I prefer the hot version because it slightly wilts the spinach leaves.

OK, the thing here is the potatoes need to be a little crunchy so be careful not to overcook them.
This is a great dinner that goods great with a fresh, green salad. Make sure that you save the leftovers (if there are any) in separate containers.

We lived in Tokyo for 3 years and that is where we fell in love with soba noodles. The great thing about them is they are gluten free which means they will not leave you feeling over-stuffed.
This recipe can be also used by substituting rice for the soba noodles but I would recommend sticking with the noodles because they complement rather than overpower the veggies.
